Origin and Habitat
Rocky coasts and seaweed meadows of Galicia (Spain) and Brittany (France), generally found between 2 and 15 meters deep.
Lifespan
Up to 8 years, growing slowly and developing a unique flavor each season.
Diet
They feed on algae and phytoplankton, which gives them their distinctive ocean flavor.
Harvesting Method
Collected by hand by divers, allowing the selection of mature specimens while respecting the ecosystem and avoiding damage to seaweed meadows.
Season
Autumn and winter, when their flavor and texture reach the highest level of quality.
